Grandma Swallum’s (Gigi’s) Gingerbread

Preheat oven to 350°


½ cup Crisco

½ tsp salt

1 tsp cinnamon

1 tsp ground ginger

¼ tsp grated nutmeg

1/8 tsp ground cloves

1 tsp baking soda

½ cup sugar

1 egg unbeaten

1 cup molasses

1 cup boiling water

2 1/c cups sifted flour

½ tsp baking powder


  1. In a mixer with the paddle, mix together the shortening, spices, salt and baking soda.  
  2. Gradually add the sugar and cream together until light.  
  3. Add egg and beat.  
  4. Add molasses and blend.  
  5. Add the boiling water and blend.  
  6. Sift together the flour and baking powder and gradually add. Mix until blended, but do not over mix.   
  7. Pour into a 10 x 10 x 2 greased pan.  Bake at 350° for 50 to 60 min.
  8. Serve with whipped cream, to which you add a little sugar and vanilla.
