Grandma Swallum’s (Gigi’s) Gingerbread
Preheat oven to 350°
½ cup Crisco
½ tsp salt
1 tsp cinnamon
1 tsp ground ginger
¼ tsp grated nutmeg
1/8 tsp ground cloves
1 tsp baking soda
½ cup sugar
1 egg unbeaten
1 cup molasses
1 cup boiling water
2 1/c cups sifted flour
½ tsp baking powder
- In a mixer with the paddle, mix together the shortening, spices, salt and baking soda.
- Gradually add the sugar and cream together until light.
- Add egg and beat.
- Add molasses and blend.
- Add the boiling water and blend.
- Sift together the flour and baking powder and gradually add. Mix until blended, but do not over mix.
- Pour into a 10 x 10 x 2 greased pan. Bake at 350° for 50 to 60 min.
- Serve with whipped cream, to which you add a little sugar and vanilla.
