Ellyn’s Rotten Fruit Cake

Makes one cake in a 9 inch pie pan
1 stick unsalted butter, softened
1 cup sugar
2 eggs
1 cup flour
1 tsp baking powder
1 to 2 cups of very ripe fruit, such as peaches, plums, nectarines.

Cream together softened butter and sugar.

Mix in eggs.

Combine flour and baking powder and add to butter mixture. Mix well.

Press batter into a 9 inch pie pan.

Poke in as much sliced or diced fruit as you like—with or without skin.

Bake at 350° for 35 to 40 minutes.

Serve with ice cream, whipped cream or plain.
