Grandma Maritz’s Oatmeal Cookies

Makes 4 dozen cookies (approximately)

INGREDIENTS

1 cup raisins
Water
1 cup salted butter (2 sticks)
1 1/8 cup sugar
2 eggs
1 tsp. vanilla
2 cups flour
2 cups Old Fashioned Oats (Quaker)
1 tsp baking soda
1 cup coarsely chopped walnuts

METHOD

  1. Bring 1 cup raisins in enough water to barely cover to a simmer, take off the heat and let stand to plump.
  2. Cream together the butter and sugar.
  3. Add eggs and vanilla and mix together.
  4. Add flour and oatmeal.
  5. Combine 1 tsp of baking soda with 3 Tbsp plus 1 tsp of the raisin juice.  Add the juice mixture and the drained raisins to batter and mix.  Add walnuts at the last.
  6. Place by tsp on a buttered cookie sheet.  Bake at 350 degrees for 8 to 10 minutes.  They have been a family favorite for five generations.
