Served for dessert at our South African wine dinner, May 2015

Makes one 9 inch deep dish pie

3 T butter, melted
1 cup white sugar
3 eggs separated
1 cup cake flour
1 tsp baking powder
¼ tsp salt
1 tsp vanilla extract
4 cups whole milk
1 T plus cinnamon sugar
• Preheat the oven to 375°
• Coat a 9” deep dish pie plate with vegetable oil cooking spray.
• In a large bowl, mix together the butter and sugar until smooth.
• Add the egg yolks and beat until light and fluffy.
• Sift in the cake flour, baking powder and salt, and stir until well blended.
• Mix in the vanilla and milk.
• In a separate bowl, whip the egg whites to stiff peaks using an electric mixer.
• Fold egg whites into batter (which is quite liquid)
• Pour into prepared pie plate, and cover the top with cinnamon sugar.
• Bake for 25 minutes in the preheated oven, then reduce the temperature to 325°.
• Continue to bake for 25 to 30 minutes, or until the center is set when you gently jiggle the pie.
• Serve warm or cold.
